tamarind soup with peanuts and veggies      add to my favorites!     add to my menus!
Ingredients

serves 4 spicy paste:1 onion, 3 crushed cloves of garlic, 1 inch peel and sliced laos, 2 red chili peppers, 3 tbs raw peanuts, 0.5 cup salted and crushed peanuts, 1tsp shrimp paste, 5 cups veg. broth, 2 tbs brown sugar, 1 tsp pulp of tamarind, salt veggies: finely sliced flesh of 1 chayote, 4oz chopped green beans, quarter of a cup corn, handful finely shredded arugula leaves, garnish with 1 sliced green chili

30 minutes

Preparation

Soak tamarind for 15 min in five tbs warm water.Combine onion, garlic, laos, chili, peanuts and shrimp paste in a food processor. Add some broth, then pour the mixture into pan with the rest of the broth. add salted peanuts and sugar and simmer for 15 min. Drain tamarind and save the juice which will be added as last ingredient. add chayote slices, green beans and corn to the soup. cook for 5 min, then add arugula leave. remove from the heat and add tamarind juice. season with salt. serve garnished with slices of green chili.
